A Slice of Home: Mary’s Irish Apple Cake – Double It & Share the Love!
Feeling that St. Patrick’s Day warmth? Mary’s Nest shares a beautiful traditional Irish Apple Cake recipe, perfect for sharing with a neighbor or two – and even easier when you double the batch!
Remember those cozy days, baking with your mom or grandma? The smell of apples and cinnamon filling the house? That’s the feeling Mary Bryant Shrader of Mary’s Nest captures perfectly with her traditional Irish Apple Cake. It’s a slice of history, a taste of comfort, and the kind of dessert that makes memories.
I've been thinking a lot about how we can reclaim those simple, nourishing traditions in our busy lives. It's easy to get caught up in quick fixes, but sometimes, slowing down and making something from scratch – even something seemingly small – can be so rewarding. This cake is proof of that.
And here's the thing: we're already cooking dinner. Why not double the recipe and share the warmth with another mom across town? Imagine her surprise – and the delicious aroma filling her kitchen! This isn’t about becoming a professional baker; it's about recognizing the value of the work you're already putting in and sharing that goodness.
Mary emphasizes the importance of honoring ancestral recipes and preserving traditional cooking methods. She believes we gain so much from connecting with our culinary heritage – and honestly, who can argue with a cake that cuts like butter?

- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs

- 1/2 cup milk
- 1/4 cup brown sugar (for topping)
- 2 tbsp butter (for topping)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
- Gently fold in the diced apples.
- Pour the batter into the prepared baking pan and spread evenly.
- In a small bowl, combine the brown sugar and softened butter for the topping. Sprinkle evenly over the batter.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool completely before slicing and serving.
