We all know the feeling: 5 PM hits, and the question echoes through the house – “What’s for dinner?” It's a constant juggle, isn't it? Cooking a family meal from scratch is a labor of love, and honestly, it deserves to be recognized beyond just the satisfaction of feeding your crew. What if the work you’re already putting in could ease your own budget, too?

That's where the Rogue Chefs community comes in. We're a network of home cooks, mostly moms, who are already making delicious dinners for their families. Why not share that goodness – and get a little help doing it?

This week, let’s tackle braised beef. It sounds fancy, but trust me, it’s totally achievable on a weeknight, especially when you double the recipe. Think about it: cook once, feed eight, and maybe sell four portions to another mom across town who's just too tired to cook tonight. $20-$50 for an hour of your time? That’s a win-win!

Chef Nick's short video showcases the key to incredible braised beef – that beautiful, deep golden sear. Don't skip that step – it’s where a lot of the flavor comes from!

Here’s a breakdown of how to make this braised beef, with tips for doubling and setting yourself up for success as a Dinner Angel on Sovereign.ink:

The Braised Beef Breakdown

Ingredients (Double Recipe)

  • 2 lbs Beef Chuck, cut into 1-inch cubes
  • 2 tbsp Olive Oil
  • 2 large Onions, chopped
  • 4 cloves Garlic, minced
  • 2 tbsp Tomato Paste
  • 1 tbsp Dried Thyme
  • 1 tbsp Dried Rosemary
  • 1 tsp Black Pepper
  • 1/2 tsp Salt (or to taste)
  • 1 cup Dry Red Wine (like Cabernet Sauvignon or Merlot)
  • 2 cups Beef Broth

Instructions

  1. Sear the Beef: Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Season beef with salt and pepper. Sear beef in batches until browned on all sides. This is CRUCIAL for flavor development! Don't overcrowd the pot – it'll steam instead of sear.
  2. Sauté Aromatics: Remove beef and set aside. Add onions to the pot and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
  3. Bloom the Tomato Paste: Stir in tomato paste, thyme, and rosemary. Cook for 1 minute, stirring constantly.
  4. Deglaze with Wine: Pour in red wine and scrape up any browned bits from the bottom of the pot. Let the wine reduce slightly, about 2-3 minutes.
  5. Combine and Braise: Return beef to the pot. Add beef broth. Bring to a simmer, then cover and transfer to a preheated oven at 325°F (160°C).
  6. Braise Until Tender: Braise for 2.5-3 hours, or until beef is very tender.

Extras & Selling Points

  • Leftovers: This is *perfect* for leftovers! Shredded beef makes amazing tacos, Shepherd’s pie, or even just reheated with a side of rice.
  • Freezer Meal Potential: Make a double batch, let it cool completely, and freeze half for a future meal.
  • CrownRunner Delivery: Imagine another mom across town, exhausted after a long day, getting a hot, home-cooked meal delivered right to her door via CrownRunner. That's the power of the Rogue Chefs community!

Pro Tip: A slow cooker (or crockpot) works beautifully for this recipe too! Sear the beef as directed, then transfer everything to the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.

Ready to turn your cooking skills into a little extra income? It's easier than you think!
