Gluten-Free Irish Soda Bread: A Weeknight Treat You Can Share
Need a little St. Patrick's Day cheer (or just a delicious, comforting bread)? This gluten-free Irish soda bread is surprisingly easy to make, and doubling the recipe means you can keep one for your family and share the other with a Dinner Angel across town!
Let’s be honest, weeknight dinners can be a whirlwind. Between school pickups, after-school activities, and just… life, finding time to bake something extra often feels impossible. But what if I told you that with a little planning, you could bake something amazing, share the love, and earn a little something extra in the process?
I recently stumbled upon this gorgeous gluten-free Irish soda bread recipe from Pure Love Bakery, and it’s got me thinking about all the moms out there who could use a hand. Imagine: another mom across town, exhausted after a long day, opening her door to find a warm loaf of freshly baked bread, ready to be slathered with butter and enjoyed. That’s the kind of kindness we build into our community!
Why Double It? (And Share the Goodness)
You already know the drill. We’re not about extra work here at Rogue Chefs. We’re about working smarter, not harder. This recipe is perfect for our doubled-recipe strategy. Making two loaves takes about the same amount of time as making one, and it's so much more rewarding to share!
Think about it: you bake a double batch, keep one for your family – a comforting, warm-from-the-oven treat for dinner – and then list the other on the marketplace. A quick CrownRunner delivery, and you've earned $20-$50 without adding a single extra minute to your cooking time. It's a win-win!
The Recipe: Gluten-Free Irish Soda Bread
This recipe is adapted from Pure Love Bakery’s video. It’s straightforward, uses readily available ingredients, and the result is a beautifully crusty, tender bread.
Ingredients:
- 3 cups gluten-free all-purpose flour blend (with xanthan gum)
- 1 cup buttermilk
- 1/2 cup currants
- 2 tablespoons caraway seeds
- 1 tablespoon baking soda
- 1 teaspoon salt
- 1/4 cup Irish butter, plus extra for slathering
- 1 tablespoon honey or maple syrup (optional, for a touch of sweetness)
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together the gluten-free flour, baking soda, and salt.
- Add the buttermilk, Irish butter (cut into cubes), and honey/maple syrup (if using). Stir until just combined – don’t overmix!
- Gently fold in the currants and caraway seeds.
- Turn the dough out onto a lightly floured surface and shape it into a round loaf.
- Place the loaf on a baking sheet lined with parchment paper.
- Cut a deep cross into the top of the loaf (this helps it bake evenly).
- Bake for 45-55 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly before slicing and enjoying!
Tips & Tricks
- Gluten-Free Flour Blend: Not all gluten-free flour blends are created equal. Make sure yours contains xanthan gum for the best texture.
- Buttermilk Substitute: If you don’t have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to a cup of milk and letting it sit for 5-10 minutes.
- Don't Overmix: Overmixing can lead to a tough bread. Stir just until the ingredients are combined.
- Freezer Friendly: This bread freezes beautifully! Wrap tightly in plastic wrap and then in foil.
If you’re ready to turn your baking skills into a side hustle, this is a perfect recipe to start with. Imagine the joy of connecting with another mom, knowing you’ve made her evening a little brighter!
