Sweet Relief for Gluten-Free Cravings: Almond Butter Kiss Cookies!
Need a quick, delicious dessert that everyone will love, even those avoiding gluten? These Almond Butter Kiss Cookies are soft, nutty, and utterly irresistible – and they’re surprisingly easy to whip up!
We all have those nights, right? The kids are tired, dinner was…a process, and everyone’s staring at you with those ‘I want something sweet!’ eyes. Instead of reaching for a store-bought treat filled with who-knows-what, why not bake something truly special? Something homemade, comforting, and that you can feel good about sharing.
These Gluten-Free Almond Butter Kiss Cookies are the perfect solution. They’re a total crowd-pleaser, and honestly, they’re so simple, you’ll wonder why you haven’t made them sooner. Plus, think about it: another mom across town might be craving something just like this tonight. Imagine being a Dinner Angel, fulfilling that sweet need with a warm, freshly baked batch – and earning a little something for your time while you’re at it!
Let's be real, doubling recipes is a mom’s superpower. We’re already cooking dinner, so why not just make enough for a few extra nights or to share? These cookies are fantastic for meal prep – freeze half for later, or deliver a batch to a neighbor. I'm thinking $25-$40 for a double batch delivered hot via CrownRunner – that’s a serious win!
The Recipe: Gluten-Free Almond Butter Kiss Cookies
This recipe is adapted from Purelove Bakery (check them out – they’re fantastic!). I've tweaked it slightly for even more ease and reliability.
Ingredients:
- 1 cup gluten-free all-purpose flour blend (with xanthan gum)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (1 stick) unsalted butter, softened
- ½ cup creamy almond butter
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 12 Hershey’s Kisses (or dairy-free alternative)
Instructions:
- Preheat & Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Dry Ingredients: In a medium bowl, whisk together the gluten-free flour, baking soda, and salt.
- Cream Butter & Almond Butter: In a large bowl, cream together the softened butter and almond butter until light and fluffy.
- Add Sugar: Gradually add the sugar, beating until well combined.
- Combine Wet & Dry: Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix!
- Drop & Bake: Drop rounded tablespoons of dough onto the prepared baking sheet.
- Bake: Bake for 8-10 minutes, or until the edges are lightly golden.
- Add Kisses: Remove from oven and immediately press a Hershey’s Kiss into the center of each cookie.
- Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Tips & Tricks:
- Gluten-Free Flour: Not all gluten-free flour blends are created equal. Use a blend that contains xanthan gum for best results.
- Almond Butter: Creamy almond butter works best. Avoid natural almond butter that separates.
- Don't Overbake: These cookies are best when they’re slightly underbaked – they’ll continue to set up as they cool.
- Freezing: These cookies freeze beautifully! Wrap them tightly in plastic wrap and store them in an airtight container in the freezer for up to 2 months.
Imagine the smiles on your family’s faces, or the gratitude from that mom across town who just needed a little sweetness in her evening! It's a small act of kindness that makes a big difference.
