Texas-Style Beef Ribs: Dinner for Eight (and a Little Leftover)

Dreaming of a smoky, comforting weeknight dinner but dreading the effort? Kyle Schroeder's Texas-style smoked beef ribs are a showstopper that's surprisingly manageable – especially when you double the recipe!

Let's be honest, sometimes the idea of a truly *amazing* dinner feels like a weekend project, right? But what if you could have fall-off-the-bone, smoky, melt-in-your-mouth beef ribs without adding hours to your day? Kyle Schroeder, over on YouTube, just showed us how it’s done with his Texas-style smoked plate ribs – and we're going to make it even easier by doubling the recipe.

Think about it: another mom across town, juggling kids and a to-do list, would absolutely be thrilled to have a hot, delicious dinner delivered right to her door. And you? You get to enjoy the satisfaction of feeding someone well, *and* earn a little extra for your efforts.

From Prep to Plate: Doubling the Deliciousness

Kyle's recipe starts with plate ribs (also called chuck plate ribs), which are a fantastic, marbled cut of beef. He sources his from HEB, but you should be able to find them at most grocery stores or your local butcher. The beauty of this recipe is its simplicity. Kyle keeps things straightforward, and we're going to follow suit, but with a doubled batch.

What You'll Need (Doubled!)

  • Meat: 8-10 lbs Chuck Plate Ribs (around 2 racks)
  • Seasoning: Double Kyle’s SPG blend (2 parts black pepper, 1 part diamond crystal kosher salt, 1/2 part garlic powder). Don't skimp – these ribs need a good coating! Meat Church Holy Voodoo is optional, but adds a nice touch.
  • Smoker: Pit Boss 820 Sportsman (or any pellet smoker)
  • Pellets: Bear Mountain Hickory Pellets (or your favorite smoking wood)
  • ThermoPro: (Highly recommended for accurate temperature monitoring!)

The Smoking Process (Scaled Up)

  1. Prep the Ribs: Kyle wisely suggests trimming off any excess fat and the silver skin.
  2. Season Generously: Lay down a sheet of foil or a baking sheet to catch the seasoning, then season the ribs heavily on all sides. Don't be shy!
  3. Smoke 'Em Low and Slow: Fire up your pellet smoker to 250°F. Place the ribs in the smoker, bone-side down towards the heat.
  4. Maintain Moisture: Kyle spritzes his ribs occasionally; feel free to do the same.
  5. The Wrap (Optional): Around 250°F internal temperature, consider wrapping the ribs in butcher paper or foil to speed up the cooking process and retain moisture.
  6. Probe for Tenderness: The goal is an internal temperature of 200°F and a probe-tender texture. This could take 8-10 hours, so be patient!
  7. Rest is Key: Let the ribs rest for at least 30 minutes before slicing. This allows the juices to redistribute, resulting in a more flavorful and tender final product.

The Extra Perks: Double the Recipe, Double the Opportunity

Here's where the real magic happens. By doubling the recipe, you've got a whole extra rack of ribs! What do you do with it?

  • CrownRunner Delivery: List your extra rack (or the whole doubled batch!) on CrownRunner. Set your price at $20-$50 – that's just a few hours of your time for a fantastic meal for a neighbor.
  • Freezer Meal Power: Vacuum seal the extra ribs and freeze them for a future family meal.
  • Meal Prep Magic: Slice the extra ribs and portion them out for easy lunches or quick dinners throughout the week.

Kyle's video is a great starting point, but remember, every smoker is different. Pay attention to your internal temperature and adjust your cooking time accordingly. And don't be afraid to experiment!

Frequently Asked Questions

Yes, plenty of people use Morton salt. Diamond Crystal just provides a slightly cleaner flavor.

Garlic powder can be substituted with granulated garlic, but the difference in taste isn't significant.

Expect around 8-10 hours, but cooking time varies depending on your smoker.
