Level Up Your Game Night: Homemade Spinach Artichoke Dip (and Bonus Rye Bread!)
That store-bought spinach artichoke dip? It’s okay. But imagine serving up a truly *amazing* version – one that tastes like actual spinach and artichokes! Plus, we're tackling a batch of delicious rye bread to go with it.
Let's be honest, sometimes those pre-made dips just don't cut it. You know, the kind that's more watery vegetable mush than flavorful goodness. But what if you could whip up a spinach artichoke dip that actually *tastes* like spinach and artichokes? Brian Lagerstrom just showed us how, and we're sharing his recipe here so you can wow your neighbors (or, even better, your Dinner Angels!).
This isn’t just about making a good dip; it's about maximizing your kitchen time. Think about it: you're already cooking dinner for your family. Why not double the recipe and earn a little extra while you're at it? Another mom across town might be craving this tonight – and you can be her hero!
Brian walks us through the entire process, from cleaning the artichokes (yes, fresh is best!) to achieving that perfect, melty cheese consistency. It’s more work upfront, absolutely, but the payoff is HUGE.
The Recipe: Seriously Delicious Spinach Artichoke Dip
Here's the breakdown, adapted from Brian's video. (Full ingredient list is in the video description, but here's a handy recap.)
For the Dip:
- 4 fresh artichokes, cleaned (or 1 can, drained)
- 1 lemon
- 2 tbsp olive oil
- 2 bags (500g) fresh spinach
- 225g softened cream cheese
- 110g mayo
- 110g sour cream
- 65g shallot (minced)
- 2 cloves garlic (minced)
- 40g parmesan, grated
- 1/2 tsp salt
- 1 tsp pepper
- 1.5 tsp chile flake
- 2 1/8 tsp lemon juice
- 120g shredded cheese (pepperjack/smoked gouda, mozzarella/gruyere, or pepperjack/white cheddar combo)
Tip: Don’t skip the lemon water bath for the artichokes – it prevents browning! Squeezing out excess moisture from the spinach is also key to avoiding a watery dip.
Baking Instructions:
- Preheat oven to 450°F (232°C).
- Scoop dip into four ramekins or an 8x8/9x9 inch baking pan.
- Top with remaining shredded cheese.
- Bake for 18-22 minutes.
Bonus: Brian's Artisan Rye Bread
While the dip is baking, why not tackle a batch of Brian’s incredible rye bread? It's the perfect accompaniment, and another opportunity to batch cook and share with your community. It's a little more involved, but so worth the effort!
